S002 “BSR Food Coalition”
On 30 January 2024, as part of the #bsrfoodcoalition project, representatives from Kurzeme schools went to Nīca Secondary School to take part in the cooking masterclass and exchange experience among school cooks!
In the first visit session, chefs, nurses and teachers of Kurzeme schools, as well as school children, listened to a lecture on South-Kurzeme ethnographical heritage and traditional dishes, many of which are carrying such rare and unknown dish names as biguze, bimbaltīre, grūdenis, kratenis:) These are just few of traditional Rucava meals, not to mention the famous Rucava white butter – one of the rare products that has received the European protection and has been included in the EU register of Protected Geographical Indications.
After the lecture, all participants gathered in the school kitchen and took part in the practical raditional meals’ cooking masterclass led by two masters Natālija Grauduže and Ruta Ķestere from the Ethnographic house of traditions “Zvanītāji”, who teached how to prepare the so called “zaķu spiras” (in Eng – bunny pellets) or “ancient” rye flour gingerbread and “biguze” – rye flour bread soup with apples, raisins and wheat flour dumplings!
